- Allicin: A sulfur-containing ingredient that gives wild garlic its characteristic flavor and odor. It is also responsible for some of the health benefits of wild garlic, such as its anti-inflammatory and antibacterial properties.
- Vitamin C: Wild garlic is rich in vitamin C, a powerful antioxidant that strengthens the immune system and protects cells from damage caused by free radicals.
- Eisen: An important mineral that is critical for the formation of red blood cells and the transport of oxygen in the body.
- Potassium: An important mineral for regulating blood pressure and maintaining fluid balance in the body.

Before you begin your search for wild garlic, it is important to follow some basic harvesting guidelines, as confusion can occur and should not be trivialized. You should not harvest wild garlic in large quantities and make sure not to pull off all the leaves from a plant. This makes it difficult for wild garlic to continue growing. It is best to harvest just one leaf per plant and then move on to the next wild garlic plant.
Three poisonous plants with which wild garlic could be confused:
- Lily of the valley (Convallaria majalis): The leaves of lily of the valley are similar to those of wild garlic, but are stiffer and do not have the typical garlic smell. In addition, lilies of the valley often grow in dense bushes and have white bell-shaped flowers.
- Herbstzeitlose (Autumn Colchicum): The leaves of the autumn crocus are similar to those of wild garlic. The flowers are purple to pink and have six petals, in contrast to the star-shaped white flowers of wild garlic.
- Aronstab (Arum maculatum): The leaves of Aronstabs they can be confused with those of wild garlic because they are also elongated and green. However, arum leaves often have darker spots and a slightly different shape. Arum is also known for its distinctive, unpleasant odor, often described as musty or putrid.
